1. Yeast feeds on carbohydrates. Because these recipes are so low in carbs, a small amount of sugar or starch must be added for the yeast to consume. This is what allows the yeast to “bloom” and produce carbon dioxide gas. These gas bubbles increase the height of the bread and create the soft, spongy texture we all know and love.

2. Only a small amount of sugar or starch is used. These ingredients are added to warm water with active dry yeast. As the yeast transforms the energy in the carbohydrates, the mixture begins to foam. This is evidence that the sugars are being consumed by the yeast – so they won’t be consumed by your body.

3. After this reaction has occurred, the yeast mixture is added to the other ingredients. The dough is allowed to rise for about an hour (as the yeast continues to consume carbohydrates and produce gas). After the dough “proofs” it is baked in the oven.

The bottom line is that very little sugar or starch are used in these recipes (usually one or two teaspoons in the entire recipe). And these starches are almost entirely consumed by the yeast before they are added to the dough. The end result is a bread that is VERY low in carbohydrates and fully compliant with the ketogenic macronutrient ratio.

For example, if you follow the (optional) “Yeast Preparation” for our Keto French Bread, you will add two teaspoons of maple syrup or honey to the yeast mixture. The final nutritional analysis of this bread reveals just 5g carbohydrate (and 2g net carbohydrate, after fiber is deducted).

By measure of calories, this bread has 79% healthy fat | 15% protein | 6% carbohydrate.

These nutritional attributes are well within the range of what is considered “ketogenic.”

And it took me days to accept the fact that I was still that same person who got picked on every day back in school.

It’s been almost two years now since I last had any prostate problems.

It was touch-and-go at one point, though.

You see, the prostate does not just start growing out of nowhere when men turn 50, 60, or 70.

This progress starts slowly in the early 30s — around the time men reach their peak in development.

No body part has as much and as many types of hormones as the prostate does. 

And there is a very delicate dance between the different types of hormones.

Testosterone is the primary fuel of the prostate. Without it, the prostate would wither down and die.

In the same way, if the prostate takes in too much testosterone, it grows too big.

It becomes an enlarged prostate.

Fortunately, a healthy hormonal system has a way to handle spikes in testosterone.

Just like we pack away excess candy and hide it from the kids (so they don’t gulp it all up), the prostate does the same with testosterone.

Specific receptors inside the prostate wrap the testosterone neatly, use it as needed, and exhaust the excess.

Let’s call them “prostate receptors.”

If these prostate receptors are working well, it doesn’t matter how high your testosterone level is. These receptors will only let in what the prostate needs.

And just to be clear, everyone has enough testosterone to balloon their prostate, even men with low testosterone levels.

Some had high testosterone levels; others lower.

Some had low estrogen; others higher.

What mattered was how well their prostate receptors functioned.

For the men who had enlarged prostates, something began to damage their prostate receptors starting in their 30s, 40s, or 50s.

Let me explain what that something is.
